Chickpea Cakes & Cucumber Salad

In honor of May 4th (AKA: Star Wars Day), we broke out my birthday present: a Star Wars Cookbook from Galaxy's Edge! Thank you Mom and Dad!


May the Force be with you as you try this bounty hunter favorite from a galaxy far far away!



 

CHICKPEA CAKES


INGREDIENTS:

  • 15 1/2 oz can Chickpeas, rinsed

  • 1 clove Garlic

  • 1 tsp ground Cumin

  • 1/2 tsp Salt

  • 1/2 tsp Black Pepper

  • A pinch of Cayenne or Chili Powder

  • A pinch of Dried Red Pepper Flakes

  • 1 Egg

  • 1/4 cup All-purpose Flour


INSTRUCTIONS:

  1. Combine chickpeas, garlic, cumin, salt, black pepper, cayenne pepper, and red pepper flakes in a food processor. Pulse until combine

  2. Add egg and mix until smooth.

  3. Add flour and blend until it creates a thick paste.

  4. In a skillet, heat a little bit of oil over medium heat.

  5. Spoon a 1/4 cup of the mixture into the hot skillet and flatten out with an oiled spoon.

  6. Cook the cakes for a few minutes on each side until golden brown.

  7. Serve with Black Bean Humus and Cucumber Salad.


CUCUMBER SALAD


INGREDIENTS:

  • 1/2 Cucumber, diced

  • 1/4 cup Onion, diced

  • 1/2 tsp Lemon Juice

  • 1 - 2 Tbsp Cilantro, chopped

  • Dash of Salt


INSTRUCTIONS:

  1. Mix all ingredients together.
